How To Make Restaurant-Quality Chicken Tika Masala

Chicken tika masala has long been one of the most popular dishes to order in Indian restaurants. The warm, creamy tomato sauce and delicious spices make it wonderful over rice or noodles, especially. But while going out for chicken tika masala is fun, it's always nice to be able to make dishes in your own home, too. If you want to make chicken tika masala in your own kitchen, just follow these instructions.

This recipe makes enough to serve four.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup plain yogurt
  • the juice of one lemon
  • 2 tablespoons butter
  • 1 can tomato sauce (8 ounces)
  • 1/2 cup heavy whipping cream
  • 1 clove of garlic
  • 2 tablespoons onion, minced
  • 2 teaspoons dried cumin
  • 2 teaspoons ground cayenne pepper
  • 1 1/2 teaspoons ground black pepper
  • 1 teaspoon cinnamon
  • 2 teaspoons salt
  • 1 tablespoon paprika
  • 1/4 cup fresh parsley, minced

Make sure you plan ahead when making this recipe, since it needs to marinate in the refrigerator for at least 2 hours. (Allowing it to marinate overnight is even better).

Cut the chicken breasts into 1-inch cubes, and set them aside. In a large bowl, combine the yogurt, 1 teaspoon paprika, cayenne pepper, cinnamon, black pepper, and 1 teaspoon salt. Stir to distribute the spices, and then add the chicken to the bowl. Stir to ensure each piece of chicken is coated. Cover the container, and place it in the fridge to marinate.

Once the chicken has finished marinating for at least 2 hours, preheat your grill to about 400 degrees F. While the grill is heating, put the chicken cubes onto skewers. You should have enough to make about 12 skewers of chicken.

Grill the chicken for about 5 minutes per side, or until it is no longer pink in the center. Remove from the heat, and set aside.

On the stovetop, combine the butter, garlic, and minced onion in the pan. Add the remaining paprika and salt. Once the onions and garlic start to brown, stir in the tomato sauce, lemon juice, and cream. Bring to a simmer, and cook for about 5 minutes or until the sauce thickens. Remove the chicken from the skewers, and add it to the sauce. Simmer for an additional 5 minutes.

Serve the chicken and sauce over rice or noodles. Garnish it with the fresh parsley and perhaps another sprinkle or two of black pepper. Enjoy! For more information, contact companies like Deccan Spice.
